Watermelon is arguably one of the most quintessential summer foods of all time. There’s just something so nostalgic about plunging face-first into a juicy slice at picnics and family barbecues. It’s mid-August in Northern Michigan, which means that summer, and watermelon season, is almost over. But let’s focus on the present! It’s still sunny, and there is still watermelon to be had for a few more weeks. And we’ve even come up with a new way to enjoy it.
…We’ve added a twist to the traditional plane-jane watermelon by combining it with salty feta, fresh basil, and walnuts for crunch. Sprinkle with some of Spice Merchants’ Ground White Pepper & Murray River Sea Salt Flakes- and you’ve got yourself a fragrant, simple salad that’s perfect for an end-of-the-season barbecue. Fans of mixing sweet and savory flavors will love this dish. Hurry, before the watermelon’s all gone… make it tonight! It only takes about 10 minutes. Tops. :)
1/2 Watermelon, rind removed & cut into large chunks
3/4 Cup Olive Oil
1 Large Handful of Fresh Basil (we used lemon basil & sweet basil!)
1/4 Cup Feta Cheese
1/4 Cup Walnuts
A Pinch of Murray River Sea Salt Flakes & White Ground Pepper, to taste
- If possible, take cubed watermelon & run through a salad spinner a few times, so that the rest of the ingredients don’t get completely saturated. (Tip: Watermelon Juice makes a great cocktail mixer or add in to Lemonade!)
- Transfer Watermelon into a large mixing bowl then add olive oil & basil. Mix.
- Sprinkle Salt & Pepper evenly across the mix, careful not too much!
- Add Walnuts & Feta cheese. Serve & Enjoy ♥
